I’d never heard of this trick before, but Christy over at Pretty Easy Living has a great tip on how to make box cakes for people with egg allergies. Who knew cans of soda pop were this useful?

This also works with diet soda, so is useful for dieters.
When I was doing a well known weightloss programme I regularly had “lemonade pancakes” made with diet lemonade, flour and egg. I’ve also made lemonade scones (and served them at a wedding!). I did wonder about making a soda water cheese scone, but never got around to making one.
Who knew?
