This Week: Gâteau St. Honoré

Here’s a classic that strikes fear in to the hearts of many, but is actually a not-too-difficult thing. You’ve probably seen it before in a pastry case. It looks like a cream-filled tart with caramel-covered cream puffs all around the edge. As with a lot of classic preparations, there are many, many variations on the theme. You can make it in a fairly stripped down style, or you can get extremely fussy. I’m planning on medium-fussy. Let’s get to it, shall we?
